Spiced Coffee Jelly with Rum Cream

Ingredients
- 4 cups hot strong coffee
- 2 whole cloves
- 1 cinnamon stick
- 2 envelopes unflavored gelatin
- Sugar
- 1/3 cup chopped nuts
- 1 Tbsp. minced candied ginger
- 2 Tbsp. rum
- 1 cup heavy cream, whipped
Directions
- Simmer coffee and spices 10 minutes; remove spices. Soften gelatin in 1/3 cup cold water. Add coffee and 3/4 cup sugar; stir until gelatin is dissolved.
- Chill until mixture begins to set. Add 2 Tbsp. sugar and the rum to cream. Unmold jelly and serve with rum cream.
