Strawberry-Kiwi Jam

Ingredients

  • 3 cups strawberries (1 1/2 quarts)
  • 3 kiwis, peeled, diced
  • 1 tbsp. lemon juice
  • 1 Tbsp. minced crystallized ginger
  • 1 pkg. fruit pectin
  • 5 cups granulated sugar

Directions

  1. Prepare fruit jars, and keep in boiling water.
  2. In a 10-quart pot, combine strawberries, kiwis, lemon juice, ginger and fruit pectin. Bring to a rolling boil, stirring constantly. Boil hard for 1 minute, stirring constantly. Remove
  3. from heat and skim foam, of necessary.

  4. Ladle into hot jars, leaving 1/4 inch headspace. Wipe jar top clean and seal tightly, invert jars and let cool completely.
