Tomato Butter

Ingredients

  • 5 lbs. tomatoes
  • 1 cup vinegar
  • 3 cups sugar
  • 1 small stick cinnamon
  • 1/4 oz. ginger root
  • 1/2 Tbsp. whole cloves

Directions

  1. Peel and slice tomatoes. Add vinegar and sugar. Tie spices in a bag and add. Cook until thick, stirring almost constantly to prevent scorching. Remove spices. Pour into clean hot jars and seal.
  2. makes 4 pints
