Ingredients
- 3 lbs. ripe tomatoes, cored and chopped
- 1 large onion, diced
- 1 jalapeno pepper, seeded and minced
- 1 cups granulated sugar
- 2 tsp. salt
- 1/4 to 1/2 tsp. ground black pepper
- 2 Tbsp. cider vinegar
- 2 tsp. balsamic vinegar
- 2 slices thick-cut bacon, cooked and crumbled, optional
Directions
- In a large pot combine tomatoes, onions, jalapeno pepper, sugar, pepper and vinegars and bring to a boil over high heart, stirring frequently. Stir in bacon if desired, reduce heat to a simmer and cook, stirring occasionally, until mixture is very thick, about 2 hours.
- Use immediately, or transfer to containers and refrigerate or freeze.
