Ingredients
- 8 cups peeled and diced watermelon rind
- 4 cups water
- 1 1/2 tsp. salt
- 4 cups sugar
- 1 lemon, thinly sliced
- 1 orange, thinly sliced
- 1 cinnamon stick, crushed
- 1 tsp. whole cloves
Directions
- Combine watermelon rind, water and salt in saucepan. Bring to a boil. Cook until tender. Drain. Stir in sugar, lemon and orange slices.
- Place crushed cinnamon and cloves in the center of a 4-inch square of cheesecloth. Tie opposite corners to form a bag. Add to the rind mixture.
- Cook over low heat, stirring occasionally, until mixture thickens and is clear, about 30 minutes. Remove cheese cloth bag. Spoon, while hot into hot sterilized jars. Seal.
