Apple-Almond Chutney

Ingredients

  • 12 tart apples
  • 1 sweet red pepper, minced
  • 2 cups cider vinegar
  • 1/2 cup red-currant jelly
  • 2 cups sugar
  • juice of 4 lemons
  • 2 green peppers, minced
  • 1 cup chopped raisins
  • 1 cup slivered almonds
  • 1/2 cup diced preserved ginger or 1 Tbsp. ground ginger
  • 1 Tbsp. salt
  • 1 stick cinnamon, cracked

Directions

  1. Peel and core apples, then cut in large pieces. Mix with remaining ingredients in kettle or Dutch oven.
  2. Bring to a boil and simmer, stirring occasionally, 30 minutes, or until thick. Pour into hot, sterilized jars, seal and process in hot water bath for 10 minutes. Store in a cool, dry place.
