Fodmap Friendly Tomato Sauce

Delicious, with no onions to contend with
Can add 5 – 6 cloves garlic if able to tolerate this
If blending at end of cooking, tomatoes will need to be skinned

Ingredients
- 3 1/2 kg tomatoes
- 500 ml vinegar
- 2 T rock salt
- 1 kg sugar
- 3 T black peppercorns
- 1 T whole cloves
- Optional: 1 t cayenne pepper
Directions

Chop tomatoes into chunks, and put in preserving pan with remainder of ingredients.

Note: peppercorns, cloves and garlic (if using) can be placed into a bag for easy removal.

Bring to boil, turn heat to low and simmer gently approx 3 hours, stirring regularly.

Remove from heat and sieve, or discard bag with spices and blend if preferred.

Fill sauce jars and cover with non-metallic lids.
