Broccoli Chicken Parmesan

Ingredients

  • 1 Tbsp. canola oil
  • 1 lb. sliced (1/4 inch thick) red potatoes
  • 1 (10-12 oz.) can chicken breast, drained
  • 2 cups broccoli florets
  • 1 (10 3/4 oz.) can condensed broccoli cheese soup (or cheese soup)
  • 1/2 cup milk
  • 1/4 tsp. garlic powder
  • 1/4 cup freshly grated parmesan

Directions

  1. Cook spiral pasta according to package directions; drain and return to pot.
  2. Heat canola oil in a skillet on medium.
  3. Add sliced potatoes. Cover and cook 10 minutes; stir occasionally.

  4. Stir in canned chicken or 2 cups chopped chicken breast and broccoli florets; cook on medium 5 minutes or until hot.
  5. In medium bowl, mix together broccoli cheese, or cheese soup, milk and garlic powder; add to skillet.
  6. Sprinkle with parmesan. Heat to boil. Cover and cook on low 5 minutes or until heated through.
  7. Serve over cooked pasta.
