Dutch almond cookies

Ingredients

  • 1 1/4 cups flour
  • 3/4 cup sugar, divided
  • 1/2 tsp. cinnamon
  • 1/2 cup (1 stick) chilled butter, cut in 1/2 inch pats
  • 1 egg, separated
  • 1/2 cup sliced almonds

Directions

  1. Line a 13×9 inch pan with foil. leaving at least an inch overhang at narrow ends of pan. Grease well. Preheat oven to 350 degrees.
  2. Mix flour, 1/2 cup sugar, cinnamon and butter with fingers until crumbly. Blend in yolk. Using fingers, press evenly into pan. Using a pastry brush, paint with beaten egg white. Sprinkle with 1/4 cup sugar and the almonds. Gently press into dough.
  3. Bake in center of oven for 18-20 minutes.
  4. Lift out pan with foil. Cut into 2-inch by 1-inch bars while warm, taking care not to slice through foil. using spatula, remove to rack and cool.
