Ingredients
- 4 cups fresh blueberries
- 1 large yellow onion, finely chopped
- 1/4 cup white-wine vinegar
- 1/4 cup sugar
- 1/4 cup raisins
- 2 Tbsp. minced fresh ginger
- 2 Tbsp. minced garlic
- 2 Tbsp. curry powder
- 1/2 tsp. salt
- 3 Tbsp. chopped fresh mint
Directions
- In a medium-size, noncorrosive saucepan, combine all ingredients except mint. Bring to a low boil over medium heat. Reduce heat; cook gently until onion is tender and chutney has thickened, 25 to 30 minutes. Stir often. Cool before adding mint.
