Blueberry Walnut Salsa pasta with shrimp

Ingredients
- 1/2 tsp. ground ginger
- 1 tsp. garlic powder
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. honey
- 4 cups (1lb.) coarsely chopped blueberries (fresh or frozen, thawed)
- 1 cup (packed) chopped cilantro leaves
- 1/4 cup minced onion
- 1/2 -1 cup toasted walnut pieces
- 2 lb. pasta, cooked per package directions
- 24 medium shrimp, cleaned, deveined, and broiled (4 minutes).
Directions
- Mix ginger, garlic, vinegar and honey. Stir in blueberries, cilantro, onion and walnuts.

makes 2 1/4 cups.
- Divide pasta on 8 individual plates. Divide shrimp between 8 plates. Spoon 2-3 tablespoons salsa on each portion.

Optional: Pass graded Jarisberg Lite cheese ar the table.

Note: Salsa is also good as a spread on turkey/ Jarisberg cheese sandwiches.
