Ingredients
- 1 Tbsp. neutral flavored oil, such as sunflower
- 1 1/2 lbs. sweet onions, cut in half and thinly sliced
- 2 Tbsp. brown sugar
- 1//2 cup raisins
- 1/4 cup cider vinegar
- Pinch crushed red pepper flakes
- 1/4 tsp. kosher salt
Directions
- Heat the oil in a large skillet over medium-low heat. Add the onions and sugar, stir to combine and cook, uncovered, stirring occasionally, for 1 hour to 1hour 15 minutes, ot until the onions are very soft , dark golden brown and sweet.
- Stir in remaining ingredients and cook, stirring occasionally, until the vinegar cooks off and the raisins soften.
- Let cool, then transfer to a covered container. Will keep, refrigerated, for aobut 1 week.
