Ingredients
- 1 gallon sliced onion, center part only (see note)
- 1 1/2 cups sugar
- 3 cups (24oz.) white vinegar (see note)
- 1 tsp. ground black pepper
- 2 tsp. salt
- 3 cups (24 oz.) water
Directions
- Place onion in an extra-large crock or nonreactive container. Dissolve sugar in vinegar, add pepper, salt and water and mix well. Pour over onion and let pickle for 2 days.

Note: It is important to use the center part of the onion and white vinegar
