Corn Relish

Ingredients

  • 1 cup vinegar
  • 1/2 cup sugar
  • 1 1/2 tsp. mustard seeds
  • 1/2 tsp. salt
  • 3 1/2 cups cooked fresh corn cut from the cob
  • 1/2 cup chopped green pepper
  • 1/2 cup diced pimiento
  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • 1 small clove garlic, minced

Directions

  1. Combine first 4 ingredients in a Dutch oven; boil 2 minutes, stirring to dissolve sugar.
  2. Add remaining ingredients to sugar mixture, and boil 3 minutes. Cool. Store in refrigerator in an airtight container,
  3. 3 1/2 to 4 cups
