Cranberry Relish Mold

Ingredients

  • 1 cup ground, uncooked cranberries
  • 1 cup sugar
  • 1 small orange, cut into small pieces
  • 1 (3 oz.) pkg. strawberry gelatin
  • 1/2 cup diced celery
  • 1/2 cup chopped pecans
  • lettuce leaves, optional

Directions

  1. Combine cranberries, sugar and orange. Let sit 1 to 1 1/2 hours.
  2. Dissolve strawberry gelatin according to package directions and chill partially. Add celery, pecans and cranberry mixture.
  3. Pour into mold (individual molds may also be used) and chill until firm. Serve on lettuce leaves, if desired.
