Crystal (Iced) Green Tomato Pickles

Ingredients

  • 1 1/2 gallon medium-size green tomatoes
  • 10 1/8 cups sugar
  • 2 quarts vinegar
  • 2 Tbsp. salt
  • 2 Tbsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. ginger
  • 1/2 cup slaked lime (calcium hydroxide)

Directions

  1. Cut green tomatoes in slices 1/4 inch thick. Cover with lime water (1/2 cup lime to 1 gallon water), and let stand overnight.
  2. Next morning, drain the water from tomatoes and rinse and let stand for an hour. Add tomatoes to syrup and cook rapidly, until the slices are glazed and the syrup clings to the spoon. Pack while hot into sterilized jars, and cover with hot syrup. Process in a hot water bath at simmering temperature for 10 minutes.
