Currant- Corn Relish

Ingredients

  • 1 cup white vinegar
  • 1/2 cup sugar
  • 1 tsp. salt
  • 1 tsp. whole celery seed
  • 1/2 tsp. whole mustard seed
  • 1/2 tsp. hot pepper sauce
  • 2 cans (12 oz. each) whole kernel corn, drained
  • 1/4 cup finely chopped green pepper
  • 3 Tbsp. currants
  • 2 Tbsp. finely chopped onion
  • 1 jar or can (2oz.) pimientos, drained and chopped

Directions

  1. Combine first 6 ingredients, bring to aa boil and boil 2 minutes. Remove from heat and add remaining ingredients. Pour into gift jars, cover and store in refrigerator.
  2. makes 4 half-pint jars
