Fresh Ginger Relish

Ingredients
- 1/3 cup peeled and minced fresh ginger
- 2 Tbsp. minced red sweet pepper
- 2 Tbsp. cider vinegar
- 2 Tbsp. orange juice
- 1 to 2 tsp. brown sugar
- 1/4 tsp. salt
Directions
- In a bowl, combine ginger, pepper, vinegar, orange juice, sugar and salt. Cover and chill several hours or overnight. Serve with grilled or roasted meats or in place of pickle relish. Store in refrigerator for up to 1 week.
