Ingredients
- 3 large (about 1 1/2 inches around) cucumbers or 2 large English cucumbers
- 1 medium green bell pepper, seeds and stem removed
- 1 medium onion, finely chopped
- 1 Tbsp. salt
- 2 tsp. celery seed
- 3/4 cup sugar
- 1/2 cup white wine vinegar
Directions
- Cut unpeeled cucumbers into 1/16 inch thick slices. Finely chop green pepper and place in a bowl along with the cucumbers and onion.
- Sprinkle with salt and celery seed and toss gently until well blended. Let stand at room temperature for 1 hour.
- Combine sugar and vinegar, stir until sugar is dissolved. Pour over vegetables and toss gently until well blended. Cover and refrigerate.
- Pickles are ready to eat in about 24 hours.
