Ingredients
- 2 lbs. green tomatoes (7 or 8 medium)
- 6 cups grated cabbage
- 6 medium white onions, peeled and chopped
- 1/2 cup salt
- 1 cup grated horseradish
- 2 green peppers, finely chopped
- 1 Tbsp. dry mustard
- 1 tsp. pepper
- 2 or 3 cups boiling cider vinegar
Directions
- Wash tomatoes and cut in sections. Mix with grated cabbage and chopped onions. Place a layer of this mixture in a bowl and sprinkle with salt. Add another layer of tomato mixture and again sprinkle with salt. Continue until all mixture is used. Cover with weight and allow to stand overnight.
- On the following day, drain well. Then add horseradish, chopped green pepper, mustard and pepper. Mix well. Pack closely into sterilized jars and cover with boiling cider vinegar. Seal.
