Ingredients
- 1 (16 oz.) can navy beans, drained and rinsed
- 1 cup finely chopped tomato
- 3/4 cup finely chopped sweet red pepper
- 3/4 cup sliced green onions
- 1/2 cup finely chopped celery
- 2 Tbsp. chopped fresh cilantro or parsley
- 1 jalapeno pepper, seeded and chopped
- 1 clove garlic, minced
- 1 (0.7- oz.) envelope Italian salad dressing mix
- 1/2 cup dressing mix
- 1/2 cup water
- 1/4 cup cider vinegar
- 1 Tbsp. olive oil
Directions
- Combine first 8 ingredients; set relish mixture aside
- Combine dressing mix and remaining ingredients in a jar. Cover tightly and shake vigorously. Pour dressing over relish mixture, and toss gently. Cover and refrigerate.
- Toss before serving. using a slotted spoon, serve relish with grilled fish, pork, burgers or vegetables
