Maple Sausage Pancake Muffins

Ingredients
- 6 oz. Ground Sausage
- 1 1/2 cups Almond Flour
- 4 large Eggs
- 4 tbsp. Coconut Milk
- 4 tbsp. Maple Syrup
- 1 tsp. Vanilla Extract
- 1 tsp. Baking Powder
- 1/4 tsp. Salt
- 20 drops Liquid Stevia
- 1/4 cup Erythritol
Directions

Break sausage into small chunks and brown in a skillet until almost cooked

Whisk together eggs, coconut milk, syrup, and vanilla, and liquid stevia until well distributed

Mix together almond flour, baking powder, salt, and erythritol; stir into the wet ingredients and mix well

Stir in sausage chunks and pour batter into 12 greased muffins cups

Bake at 350F for 20-25 min; allow to cool 5 min before removing from pan
