Ingredients
- 10 cups ground zucchini
- 5 Tbsp. salt
- 4 cups green onion, chopped
- 2 1/2 cups vinegar
- 2 1/2 cups sugar
- 1 green bell pepper
- 1 red bell pepper
- 2 tsp. mustard seed
- 1 Tbsp. nutmeg
- 1 Tbsp. celery seed
- 1 tsp. turmeric
Directions
- Mix ground squash and salt and let stand overnight. Rinse and drain.
- Mix remaining ingredients and bring to a boil. Add squash, return to boil. Put in jars and seal.
