Vegetable Relish

Ingredients

  • 4 cups ground onions
  • 4 cups ground cabbage
  • 4 cups ground green tomatoes
  • 12 green peppers, chopped
  • 6 sweet red peppers, chopped
  • 1/2 cup salt
  • 6 cups sugar

Directions

  1. Grind vegetables using coarse blade. Sprinkle with salt; let stand overnight. Rinse and drain. Combine remaining ingredients; pour over vegetables. heat to boiling. Simmer 3 minutes. Seal in hot, sterilized jars.
