Ingredients
- 18 medium tomatoes, peeled, seeded and chopped (8 cups)
- 2 cups minced celery
- 1 cup minced green pepper
- 1 cup finely chopped onion
- 1/3 cup salt
- 2 cups white vinegar
- 1 1/2 cups sugar
- 1 1/2 tsp. mustard seed
- 1 tsp. pepper
Directions
- Place the vegetables in a large bowl; sprinkle with salt. Stir until blended. Let stand for 30 minutes. Drain; rinse and drain again.
- In a large kettle, bring vinegar, sugar, mustard seed and pepper to a boil; reduce heat. Simmer, uncovered, for 15 minutes. Add vegetables; return to a boil. Ladle hot relish into hot jars, leaving 1/4 inch headspace. Adjust caps. Process for 20 minutes in a boiling-water bath.
