Tomato Relish

Ingredients

  • 1 large onion, chopped
  • 1/4 cup jalapenos or habaneros, chopped
  • 6 medium ripe tomatoes, chopped
  • 6 Tbsp. vegetable oil
  • 1 tsp. salt
  • 1/4 tsp. sugar
  • 1 tsp. dried crushed cilantro
  • 2 green tomatoes
  • 3 Tbsp. lemon juice
  • 1/2 small bell pepper
  • 1 minced clove garlic
  • 2 Tbsp.. balsamic vinegar

Directions

  1. Place all ingredients in a blend jar, and blend until desired consistency.
  2. Fill clean canning jars to 1/4 inch of rim.
  3. Wipe rim and threads with a clean, damp cloth. Cover with hot metal lids, and rings. Cold pack.
