Tomato- Raisin Relish

Ingredients

  • 1 can (14 1/2 oz.) tomatoes
  • 1 1/3 cups sugar
  • 1 cup raisins
  • 3/4 cup chopped onion
  • 1/4 cup vinegar
  • 1 clove garlic, minced (optional)
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • Pinch of cayenne pepper
  • 2 cups diced apples

Directions

  1. In 3 quart saucepan, combine all ingredients except apples. Break up tomatoes with wooden spoon.
  2. Simmer uncovered, stirring occasionally, 30 minutes or until most of liquid is absorbed. Stir in apples. Keeps refrigerated up to 3 weeks.
  3. makes 4 cups.
