Tomato Puree

Ingredients

  • 4 quarts tomatoes
  • 1 small onion, sliced
  • 1 stalk celery or celery leaves
  • 1 bay leaf
  • 2 tsp. salt
  • 1/4 tsp. paprika

Directions

  1. Cook all ingredients until tomatoes are tender, then rub it through a strainer. Boil the pulp until it is reduced to one half the original volume. Seal in hot clean jars.
  2. makes 3 pints
