Tomato- Pear Chutney

Ingredients

  • 1 lb. tomatoes, peeled and coarsely chopped
  • 1 lb. firm pears, peeled and chopped
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1/8 tsp. cayenne
  • 1/2 tsp. dry mustard
  • 1/2 tsp. ground ginger
  • 1 tsp. salt
  • 1/2 cup cider vinegar
  • 1 cup sugar
  • 1 small pimiento, chopped

Directions

  1. Mix all ingredients, except pimiento. Simmer, stirring frequently, about 1 hour. Add pimiento, pour into hot sterilized jars and seal. Process in water bath 5 minutes.
  2. makes about 3 half-pints
