Ingredients
- 1 medium, mild white onion, peeled and thinly sliced
- 2 1/2 lbs. (about 5 medium) cucumbers, unpeeled, sliced 1/4-inch thick
- 2 Tbsp. salt
- 2 quarts ice cubes
- 4 cups sugar
- 2 cups cider vinegar
Directions
- In a large bowl, mix onion and cucumber slices with salt; cover with ice cubes and refrigerate 2 to 3 hours.
- Drain and discard any un-melted ice cubes; do not rinse.
- Pack cucumber and onion slices in freezer containers or freezer jars, filling to within 1 1/2 inches of the top.
- In a 2 quart saucepan, combine sugar and vinegar; bring to a boil, stirring until sugar dissolves. Pour just enough hot syrup over cucumbers to cover. Place lids on containers.
- Cool, then freeze for at least 1 week. To thaw, place container in refrigerator for at least 8 hours.
