Ingredients
- 1 gal. sliced green tomatoes (about 7lbs.)
- 1 cup coarse salt
- 1 qt. cider vinegar
- 2 cups sugar
- 4 tsp. whole cloves
- 4 tsp. whole allspice
- 3 2-inch sticks cinnamon
Directions
- Rinse green tomatoes, remove stem ends and slice. Put on half the tomatoes in a large bowl; add one half the salt. Repeat layering. Cover and set aside overnight.
- Next day, drain tomatoes; discard liquid. Heat vinegar and sugar to boiling in large, heavy sauce pot, stirring until sugar is dissolved.
- Tie spices together in a double thickness of cheesecloth. Add to the pot with tomatoes; simmer 10 minutes.
- Fill and seal jars; cool away from drafts. Label jars; store in cool, dry place.
