Sweet Green Tomato Pickles

Ingredients

  • 1 gal. sliced green tomatoes (about 7lbs.)
  • 1 cup coarse salt
  • 1 qt. cider vinegar
  • 2 cups sugar
  • 4 tsp. whole cloves
  • 4 tsp. whole allspice
  • 3 2-inch sticks cinnamon

Directions

  1. Rinse green tomatoes, remove stem ends and slice. Put on half the tomatoes in a large bowl; add one half the salt. Repeat layering. Cover and set aside overnight.
  2. Next day, drain tomatoes; discard liquid. Heat vinegar and sugar to boiling in large, heavy sauce pot, stirring until sugar is dissolved.
  3. Tie spices together in a double thickness of cheesecloth. Add to the pot with tomatoes; simmer 10 minutes.
  4. Fill and seal jars; cool away from drafts. Label jars; store in cool, dry place.
