Sweet Pickle Chunks

Ingredients

  • 10 medium cucumbers (5 lb.)
  • Boiling water
  • 8 cups sugar
  • 4 cups vinegar
  • 2 Tbsp. mixed pickling spices
  • 4 tsp. pickling salt

Directions

  1. Cover whole cucumbers with boiling water; let stand overnight. Drain. Repeat for 3 more days.
  2. On the fifth day, drain and cut into bite-size chunks. Combine sugar, vinegar, spices and salt; bring to boiling and pour over cucumber chunks. Cover and let stand for 2 days. Then, bring mixture to a full boil; fill hot, clean pint jars, leaving 1/2-inch headspace. Adjust lids. Process in boiling water bath 5 minutes. Start timing as soon as jars are placed in water.
