Squash Relish

Ingredients

  • 10 cups chopped squash (yellow and zucchini0
  • 4 cups onion, chopped
  • 1 large green bell pepper, chopped
  • 1 large jar diced pimento
  • 1 large red bell pepper, chopped
  • 5 Tbsp. salt
  • 1 1/2 cups white vinegar
  • 5 cups sugar
  • 1 Tbsp. turmeric
  • 1 Tbsp. celery seed
  • 1 Tbsp. Accent

Directions

  1. In a large bowl, or saucepot, place squash, onions, green and red bell pepper and pimento Stir to combine. Sprinkle salt over mixture and let stand 1 hour. Drain.
  2. Add remaining ingredients. Mix together well, bring to a boil and seal in jars.
