frequently called for in recipes. Similar to sour cream but smoother and richer. If unavailable in your local stores, this will make a suitable substitute, unlike sour cream, it won’t break when heated.

- 1 cup heavy cream, preferably natural and not ultra-pasteurized or processed
- 2 Tbsp. cultured buttermilk
- 1 Tbsp. fresh lemon juice
