Ingredients
- 1 (10 oz.) pkg. pearl onions, blanched in boiling water for 1 minute, peeled and quartered
- 1 cup baby carrots, cut into small pieces
- 1 (8.5 oz.) can baby corn, rinsed under running water, drained/ cut into small pieces
- 2 small kumquats, thinly sliced
- 1/2 cup green pepper, cut into small pieces
- 2 tsp. finely grated ginger
- 1/2 cup sweet rice vinegar
- 1/2 cup water
- 1 Tbsp. granulated sugar
- 1/4 tsp. red pepper flakes
Directions
- n Combine all ingredients in a medium bowl. Stir well and cover. Refrigerate overnight. Serve as an accompaniment to poultry or fish.
