Ingredients
- 3 tart apples
- 2 cups of fresh or frozen rhubarb
- 1 cup raisins
- 1 finely chopped medium onion
- 1 cup cider vinegar
- 1 cup apple juice
- 1/2 cup brown sugar
- 1 tsp. ground ginger
- 1 tsp. mustard seed
- 1 tsp. salt
- 1 bay leaf
Directions
- Peel, core and dice apples. Combine with rhubarb.
- In a non-aluminum pan, add, apple and rhubarb, raisins, chopped onion, cider vinegar, and apple juice. Bring to a simmer.
- Add brown sugar, ginger, mustard seed, salt and bay leaf. Cook uncovered for 30 minutes, stirring often, until mixture is thick.
- Remove bay leaf. Serve with roast lamb, duck or chicken.
