Jasmine Rice

Ingredients
- 2 cup jasmine rice
- 1 cup light coconut milk
- 1 cup water
- salt (optional)
Directions
- Bring all ingredients to full boil, then simmer on lowest heat for 30 minutes, or until liquid is absorbed. Rest with lid another 10 minutes and serve.
