Spiced Pineapple Pickle

Ingredients

  • 2 medium pineapples
  • 1 1/2 cup mild honey
  • 1/2 cup water
  • 1/2 cup white wine vinegar
  • 10 whole cloves
  • 1 (3-inch) stick cinnamon

Directions

  1. Cut pineapples in 1/4 inch crosswise slices. Peel and remove eyes. Cut slices into quarters and remove cores. In a large saucepan, combine remaining ingredients. Bring to boil, stirring. Add pineapple. Slowly heat to boiling. Simmer 30 minutes. Ladle into hot sterilized half pint jars. Seal.
  2. about 6 jars.
