Ingredients
- 3 quarts figs (do not peel)
- 1/2 cup baking soda
- 2 quarts boiling water
- 6 cups granulated sugar
- 1 cup vinegar
- 2 Tbsp. whole cloves
- 1 stick cinnamon
Directions
- Place figs in a large pan. Sprinkle soda over figs and add boiling water. Let stand 5 minutes.
- In a large cooking pot, combine water, sugar and vinegar. Tie cloves and cinnamon in cheesecloth and add to pot.
- Drain figs and boil in syrup 10 minutes; cool and refrigerate overnight. Repeat process every morning for 3 mornings.
- Pack in pint jars. Seal. Process in a boiling water bath for 10 minutes.
