Cajun Chicken with Chile Cream Sauce

Ingredients

  • 4 (4 to 6 oz.) boneless, skinless chicken breast halves
  • 2 tsp. Cajun seasoning
  • 1 Tbsp. olive oil
  • 1 (10 3/4 oz.) can cream of chicken soup
  • 1/2 cup water
  • 1 (4 oz.) can chopped green chiles
  • 1 tsp. fresh lime juice
  • 1/4 cup reduced-fat sour cream

Directions

  1. Season chicken with Cajun seasoning.
  2. Heat oil in a large skillet on medium. Add chicken and cook 6 to 8 minutes or until browned, turning once.
  3. In a small bowl, combine soup, water, chilies, and lime juice; mix well. Add to skillet and bring to boil; reduce heat and cook 5 minutes or until chicken is no longer pink. Stir in sour cream and heat through, but do not boil.
