Shrimp Chartreuse

Ingredients

  • Shrimp Chartreuse
  • 6 shrimp per person
  • Minced shallots
  • basil
  • Pinch of thyme (leaf kind only) optional
  • Butter and olive oil- half and half
  • White pepper
  • Lemon juice
  • Gold chartruese
  • Cream
  • Large pan

Directions

  1. saute shallots in butter and oil

  2. add herbs and lemon juice

  3. cook shrimp until half done

  4. flame with chartruese

  5. remove shrimp

  6. reduce

  7. add cream

  8. cook until thickens

  9. add back shrimp
