Oatmeal Pancakes

Ingredients

  • 2 C milk
  • 1 1/2 C quick oats
  • 1C self rising flour(coconut flour only 1/3 C)
  • 2 T sugar
  • 2 eggs beaten
  • 1/3 C oil

Directions

  1. Pour milk over oats and let stand five minutes.

  2. Add beaten eggs.

  3. Add oil.

  4. Add flour and sugar

  5. Mix lightly

  6. Can store unused batter in frig at least several days

  7. If self rising flour not available can use regular flour with 2 ½ t baking powder, 1 t salt
