maple Mustard- Glazed Pork loin

Ingredients

  • 3 Tbsp. Dijon mustard
  • 2 Tbsp. soy sauce
  • 2 Tbsp. cider vinegar
  • 2/3 cup maple syrup
  • coarse salt and pepper to taste
  • 3 lb. boneless pork loin roast
  • 1 lb. carrots, halved and quartered lengthwise
  • 6 medium red potatoes, halved

Directions

  1. Heat oven to 350 degrees. Combine Dijon mustard, soy sauce, maple syrup, and salt and pepper to taste; mix well. Spread evenly over roast. Place in a shallow roasting pan.
  2. Surround pork with carrots, and potatoes (may add a sliced onion or two if desired). Bake 45 minutes or until internal temperature of pork reaches 145 degrees and vegetables are tender. Remove pan from oven; tent foil and let stand 5 minutes. Slice pork and serve .
