Smoked Meatloaf

Ingredients

  • 2 lbs. ground beef
  • 1 lb. sweet Italian sausage
  • 1 small onion, chopped
  • 4-6 fresh jalapenos, chopped (optional)
  • 1 cup Italian-style bread crumbs
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1/4 cup Worcestershire sauce
  • 1 Lb. bacon (optional)

Directions

  1. Mix ingredients (remove veins and seeds from jalapenos) except Worcestershire and bacon. Form a loaf. Wrap bacon strips around loaf, if desired. Cook in smoker one hour at 300 degrees. Place loaf on foil, add Worcestershire and seal foil. Cook 30 minutes; internal temperature should react 160 degrees. Allow meat to rest 20 minutes in foil before serving.
