Tofu Sour Cream

Ingredients

  • 1 (12 oz.) pkg. extra firm light silken tofu, drained
  • 1 Tbsp. lemon juice
  • 1 Tbsp. red wine vinegar

Directions

  1. Combine all ingredients in a blender of food processor and puree until smooth. Chill until ready to serve.
  2. makes about 1 1/2 cups

  3. Use in stroganoff, on baked potatoes or wherever sour cream is used.

  4. Note: Silken tofu, a soft, Japanese-style tofu, is often packaged in aseptic boxes and stored at room temperature on store shelves.
