Paulette’s Cajun Pork

Ingredients

  • 1 1/2 to 2 Lb. pork loin, cut into large chunks
  • Vegetable oil, for browning
  • Cajun seasonings, to taste
  • 2 ( 15 oz.) cans stewed tomatoes with onion, celery and bell pepper
  • Water
  • 1 cup brown rice

Directions

  1. Using the browning function on a slow cooker (or in a skillet on the stovetop.), brown pork loin on all sides in hot oil. Season with Cajun seasonings. Add the tomatoes with their liquid. Add a little water to each empty can of tomatoes and swish it around and pour into cooker along with the uncooked rice. Set slow cooker to low and cook 6 to 8 hours or until pork and rice are tender.
