Ingredients
- 1 pound ground beef
- 3 tablespoons extra virgin olive oil
- 1 large diced onion
- 4 minced cloves of garlic
- 1/2 cup bulgar
- 3 cups diced mushrooms
- 3 tablespoons dried oregano
- 2 teaspoons cumin
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 1 15 ounce can of pinto beans, rinsed
- 1 15 ounce can of hominy, rinsed
- 1 14 ounce can diced tomatos
- 4 cups chicken broth
Directions

Heat olive oil in dutch oven over medium heat.

Add meat, onion, and garlic.

Cook until meat is no longer pink.

Add mushrooms.

Reduce heat to medium and cook until mushrooms starts to soften.

Add bulgar and seasonings.

Stir while cooking, until spices are aromatic.

Add chicken broth.

Bring to a boil.

Reduce to a simmer and cook for 50 minutes, or until liquid has thickened
