Steak Salad with Herb Sauce

Ingredients

  • 3 cloves garlic
  • 1 1/4-inch slice of onion
  • 1/2 cup fresh cilantro
  • 1/2 cup flat leaf parsley
  • 1 Tbsp. red wine vinegar
  • 1/4 tsp. dried oregano
  • 1/4 tsp. crushed red pepper flakes
  • 1/4 tsp. salt
  • 1/4 cup extra-virgin olive oil
  • 12 oz. mixed salad greens
  • cherry or grape tomatoes
  • sliced button mushrooms
  • leftover steak, thinly sliced

Directions

  1. Pulse the garlic cloves and onion slice in a food processor to chop. Add the cilantro, parsley, red wine vinegar, oregano, red pepper flakes, and salt. Pulse to combine. Through the food chute, stream in the olive oil, processing until smooth. Divide the greens, tomatoes halves and slice mushrooms among four plates. Place thinly sliced steak on the greens. Spoon the sauce over the steak. Serve with extra sauce on the side and crusty bread.
