Texas Two-Step Black- Eyed Pea Salad

Ingredients
- 3 cups cooked brown rice
- 1 (15 oz.) can black-eyed peas (rinsed)
- 1 (11 oz.) can corn (rinsed)
- 1 avocado, peeled, pitted and diced
- 1 cup salsa
- 1/2 cup chopped cilantro
- 1/4 cup sliced red onion
- 2 Tbsp. fresh lime juice
- coarse salt and pepper to taste
Directions
- Mix together all ingredients, and serve as a side dish for barbecue or roast.
