Texas Two-Step Black- Eyed Pea Salad

Ingredients

  • 3 cups cooked brown rice
  • 1 (15 oz.) can black-eyed peas (rinsed)
  • 1 (11 oz.) can corn (rinsed)
  • 1 avocado, peeled, pitted and diced
  • 1 cup salsa
  • 1/2 cup chopped cilantro
  • 1/4 cup sliced red onion
  • 2 Tbsp. fresh lime juice
  • coarse salt and pepper to taste

Directions

  1. Mix together all ingredients, and serve as a side dish for barbecue or roast.
