Pineapple Refrigerator Dessert

Ingredients
- 1 1/2 cups graham cracker crumbs, about 16 crackers
- 2 Tbsp. granulated sugar
- 1/4 cup butter, melted
- 1/2 cup butter, softened
- 1 cup confectioners' sugar
- 1 egg
- 1 cup chilled whipping cream
- 1 ( 201/2 oz.) can crushed pineapple, well drained
Directions
- Mix together the graham cracker crumbs, sugar and melted butter. Press 1/2 of this mixture in bottom of an 8-inch square pan.
- Beat the 1/2 cup softened butte, confectioners’ sugar and egg until mixture is light and fluffy. Spread over graham cracker layer.
- In a chilled bowl, beat the chilled whipping cream until stiff. Fold in drained pineapple. Spread over above mixture.
- Sprinkle with remaining graham cracker crumbs. Cover and chill 12 hours before cutting into squares and serving.
